Crispy Air Fryer Tuna Patties - Quick, Budget-Friendly, and Flavor-Packed

Ingredients
  

  • 2 cans (5 ounces each) tuna, drained well (water-packed or oil-packed)
  • 1 large egg
  • 1/3 cup plain breadcrumbs (panko for extra crunch)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest (optional but brightens the flavor)
  • 1/4 cup finely chopped red onion or shallot
  • 2 tablespoons chopped fresh parsley (or 1 teaspoon dried)
  • 1 small garlic clove, minced (or 1/4 teaspoon garlic powder)
  • 1/2 teaspoon paprika (smoked or sweet)
  • 1/4 teaspoon crushed red pepper flakes (optional for heat)
  • Salt and black pepper, to taste
  • Olive oil spray or neutral cooking spray
  • Lemon wedges, for serving

Method
 

  1. Prep the air fryer: Preheat to 390°F (200°C) for 4–5 minutes. Line the basket with a perforated parchment sheet if you have it, or lightly spray the basket.
  2. Mix the base: In a bowl, whisk the egg, mayonnaise, Dijon, lemon juice, and zest until smooth.
  3. Add flavor and binders: Stir in onion, parsley, garlic, paprika, red pepper flakes, a pinch of salt, and a few grinds of pepper.
  4. Fold in tuna and crumbs: Add the drained tuna, breaking it up with a fork. Sprinkle in the breadcrumbs and gently mix until the mixture holds together. It should be moist but not wet. If too loose, add 1–2 more tablespoons breadcrumbs.
  5. Form patties: Divide into 6 equal portions. Shape into patties about 1/2 inch thick. Press the edges so they’re compact and even.
  6. Oil lightly: Spray both sides of each patty with cooking spray. This helps with browning.
  7. Air fry: Arrange patties in a single layer in the basket without touching. Cook for 8–10 minutes, flipping halfway, until golden and crisp. Thicker patties may need an extra 1–2 minutes.
  8. Serve: Squeeze with fresh lemon and serve hot with your favorite dip—tartar sauce, garlic yogurt, or a spicy mayo all work well.
