Melt-In-Your-Mouth Garlic Butter Shrimp - Fast, Flavorful, and Comforting

Ingredients
  

  • 1 1/2 pounds large shrimp, peeled and deveined (tails on or off)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 5–6 garlic cloves, finely minced
  • 1/4 teaspoon red pepper flakes (optional, adjust to taste)
  • 1/3 cup dry white wine or low-sodium chicken broth
  • 1 tablespoon fresh lemon juice, plus wedges for serving
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Lemon zest from 1/2 lemon (optional, but brightens the sauce)

Method
 

  1. Pat the shrimp dry. Moisture is the enemy of a good sear. Use paper towels to dry both sides, then season lightly with salt and pepper.
  2. Heat the pan. Place a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of the butter. When the butter foams, you’re ready to cook.
  3. Sear in batches. Add half the shrimp in a single layer. Cook 1–2 minutes per side, until just pink and slightly curled. Transfer to a plate and repeat with the remaining shrimp. Do not overcook.
  4. Sauté the garlic. Reduce the heat to medium. Add the remaining 3 tablespoons butter to the pan. When melted, add garlic and red pepper flakes. Stir for 30–45 seconds, just until fragrant.
  5. Deglaze. Pour in the wine or broth. Scrape up any browned bits from the bottom of the pan. Simmer for 1–2 minutes to reduce slightly.
  6. Finish the sauce. Stir in lemon juice and zest. Taste and season with more salt and pepper if needed.
  7. Return the shrimp. Add the shrimp and any juices back to the skillet. Toss to coat and warm through for 30–60 seconds.
  8. Garnish and serve. Remove from heat and sprinkle with parsley. Serve immediately with rice, pasta, or crusty bread to soak up the sauce.
